This recipe came from a friend and is a wonderful meal for lunch or a light dinner. Serve it alone or with some steamed vegetables.
2 cups quinoa
3 1/2 cups water
Pinch of sea salt
1 cup cilantro (can chop or leave leaves whole)
5 green onions sliced
1 small red bell pepper, diced small
2 cups cooked black beans, drained
1/4 cup extra virgin olive oil
1/2 cup fresh squeezed lime juice
1 teaspoon ground cumin
1 1/2 teaspoon sea salt
Rinse the dry quinoa in a fine mesh strainer under warm running water. Place rinsed quinoa in a medium pot with the water and a pinch of sea salt. Bring to a boil, reduce heat to low, cover and let simmer for about 20 minutes, or until all the water is absorbed.
Remove cooked quinoa from pot and place in a large bowl to cool.
Combine olive oil, lime juice, cumin and sea salt in s small bowl. Whisk together and pour over cooled quinoa and toss with a fork.
Add cilantro, green onions, red bell pepper and black beans and toss again.
Serves 4 – 6 persons
